This delicious salad makes the most of fresh ingredients and works well with any grilled meat.

SERVES: 4

1 teaspoon lemon zest

3 tablespoons lemon juice

3 tablespoons olive oil

salt and pepper, to season

¼ cup cracked burghul

1 bunch flat-leaf parsley, finely chopped

2 cucumbers, diced

2 tomatoes, diced

½ small red onion, finely diced

1.Place the lemon zest, lemon juice, olive oil and salt and pepper in a bowl with the burghul and allow to soak for 30 minutes.

2.Place the parsley, cucumber, tomato and onion in a large bowl. Add the burghul mixture. Toss to combine and serve immediately, or refrigerate to allow the flavours to develop further.
